This weeks meal plan includes a protein-packed breakfast, a healthy lunch, one of my favorite dips, and three dinner options.

Quick life update:

  • We are prepping for a quick family roadtrip and planning to take a few short hikes so I am testing out carrying Davis on my back. So far he’s loving it! He likes that he can lay his head down on my back when hes tired. This is the carrier we are using. The weight limit goes up to 45lb so we can actually use it for our toddler too!

  • We harvested so many zucchini at once and didn’t want them to go bad. My wife researched the best way to preserve zucchini. We blanched them, transferred to an ice bath, drained and dried. Then, when they were completely dry, I vacuum sealed with this little handheld vacuum sealer.

  • Vanilla and chocolate twist with rainbow sprinkles is one of my favorite things about summer.

  • My heirloom tomato plants had so many heavy tomatoes that they were almost falling over and breaking. I ended up just pulling the heavy tomatoes off even though they hadn’t turned yet. Fingers crossed they still turn!!
