It’s finally starting to feel like summer here. We are somewhat settled in our new home and its time to really enjoy it! We had friends over for grilled steaks and veggies on Friday and it was the perfect way to welcome our new grill and enjoy the new backyard.
I am SO excited to get back into a normal work routine. I actually sat down with Amy last night and told her all my work plans for the week because I am just so pumped.
The fresh summer produce has me feeling so inspired. I am working on dishes with corn, zucchini, tomatoes, cherries, basil and peaches. So many summer favorites.
Amy is truly the best and built me 4 planter boxes for the back yard. We are a little behind on the planting season, but I want to do our best. I am excited to at least do what we can this year with the time we have. Definitely some cherry tomatoes and herbs!!
Okay onto the food. This is truly one of my favorite types of recipes to make. I look at the pantry, I look in the fridge, and then I combine whatever I have with pasta.
It’s incredible what you can make, even if you aren’t using a traditional “sauce”. The sweet onions mixed with a bit of balsamic vinegar is the perfect hint of sweetness and acid when combined with the rich pasta, seasoned turkey and fresh broccoli. And, of course, a healthy dose of parmesan cheese never hurts a pasta recipe.
Substitutions: Use any ground meat or vegetarian ground meat substitute that you like. You could also use a seasoned ground sausage blend, but if its seasoned you can omit or cut back on the seasonings I have listed here. I think orecchiette is the perfect pasta shape for this dish, but you can use any shape you like. Lastly, if you aren’t a fan of broccoli you can use chopped asparagus or green beans in the same way. You can also mix spinach or shredded brussles sprouts in with the meat and onions while you are sautéing.
