Sheet Pan Chicken and Potatoes with EASY Chimichurri
You will wanna eat this chimichurri on EVERYTHING :)
There are so many reasons why I love this EASY meal! Have you ever removed the bone from chicken thighs prior to cookie them? Its the perfect way to get the crispy skin on the top and evenly cooked, juicy meat.
Just take a sharp knife or kitchen shears and cut the bone out of the bottom of the chicken thigh. Then, the chicken thigh will lay flat on the sheet and cook evenly.
I also love the crispy smashed potatoes. Potatoes are perfect in any form, but when you cook them almost full and then smash them down to finish cooking they are epic. You’re left with potatoes that are soft on the inside and crispy on the outside.
And lastly, the chimichurri… it is so good I want to dip everything I eat in it. Do not be intimidated by this sauce, I promise it is SO easy and there are a few different ways that you can make it.
