I simply love to share a recipe that you can take and make your own basically with whatever you’ve got on hand!! This roasted veggie pasta sauce can be made exactly as written OR you can use it as a template to make it the way you love.
I like it with ground turkey or ground chicken, but it would also work with ground beef. To make this meal vegetarian you can completely omit the meat OR use a plant based substitute like beyond meat crumbles.
Serve it over zoodles for a lower carb option or with some toasted bread for those who don’t like pasta. Swap out the veggie for anything you like or have on hand. You can even do just triple the tomatoes and leave out the carrot and bell pepper if you like!
