Amy and I like to serve this peanut chicken salad on lettuce for a larger salad or in little bite size lettuce cups!
I tend to serve this cold, but you can also serve this warm. To turn this into a warm dinner for the family, double the sauce and cook a package of rice noodles. Toss the warm chicken and warm rice noodles with the veggies and sauce and serve!
