You might be thinking, “really Madeline!? Chicken soup in the summer!?” BUT hear me out. First of all, I am hearing about SO many summer sniffles.
Second of all, NOW is the perfect time to start stocking the freezer for the future. When that first fall cold hits you will thank the previous version of yourself that placed a quart of healing chicken noodle soup in the freezer for later.
If you haven’t grabbed Souper Cubes yet, I highly suggest trying them out for something like this! I made a batch of this soup for my brother and sister in law when they had their baby in the spring and my brother kept saying, “you need to mass produce these chicken soup cubes!!”
A few tips:
Cook your noodles and soup separately. Cooked noodles LOVE to soak up broth so if you want your soup to stay broth-y, cook and store the noodles separately. Then serve each bowl by warming the soup and pouring it over the noodles in the bowls.
For extra flavor, use bone in skin on chicken breast. It is much easier to use boneless skinless, BUT the bone in version will leave you with a richer broth and more tender chicken meat.
