Ginger Scallion Meatball Stir Fry
Toddler approved turkey meatballs with veggies in a delicious savory sauce
I naively thought that I was that parent with a unicorn of a child. The kid that would eat anything and never hit a picky phase. I kid you not the week that kid turned 2 he started living on fruit, cheese and rage.
One food we can still get him to eat are meatballs. He got so excited for meatballs at dinner one day that he started yelling “I love meat!!” in the middle of the grocery store.
Our family needed a break from Italian food, but not a break from meatballs. Enter the meatball stir fry. Tender turkey meatballs are seasoned with garlic, ginger and sliced scallions. They also have toasted sesame oil and panko bread crumbs.
I make this stir fry with frozen stir fry vegetables to make it even easier. I always keep an extra bag of stir fry veggies in the freezer so that i have them whenever I need a low lift dinner. I also use pre-grated garlic and ginger so that there is very little prep work involved in making this recipe.
