Creamy Green Goddess Grilled Chicken Skewers
with veggies and an addictive green goddess dipping sauce
My wife is notorious for sitting down to dinner and saying something like “does this have a sauce?” or “does this come with a dip?” If I’m being honest, it used to really bother me like "Is my recipe not enough!?” but really girl just loooooves a sauce.
I am happy to report that the creamy green goddess yogurt sauce MAKES this recipe. This sauce highlights fresh herbs that are so gorgeous this time of year. It is bright, flavorful and simply addicting. To make things easy we will use the same sauce for marinating the chicken cubes and for serving with the meal.
I love making my full summer meals on the grill so I grilled some skewers of veggies alongside the chicken. I find that keeping veggies and meat separate when grilling allows you to cook everything evenly. Be sure to soak your skewers prior to cooking to prevent them from catching on fire.
