I hope these classic chocolate chip oatmeal cookies are a recipe that you will come back to again and again. This is the cookie recipe I will make for a road trip or to bring to a friend who just had a baby. I literally just froze half a batch to bring to a friend :)
They are rich, comforting, and SO easy to make. They have all the best parts of a classic chocolate chip cookie, but made with rolled oats instead of flour. If you check for certified gluten free oats and chocolate chips, then this recipe is gluten free!

Ingredients:
3 cups rolled oats – separated
1 tsp ground cinnamon
½ tsp salt
½ tsp baking soda
1 stick of butter – unsalted, softened
1 cup brown sugar – packed
1 egg – room temperature
2 tsp vanilla extract
1 cup semi-sweet chocolate chips
Flakey sea salt for topping
