WE DID IT!! We are finally moving into our new house. After 6 months of renovation it is finally time to call that place home.
Overall we have been really lucky to have a decently quick renovation. It was not without issues or hiccups, but overall we are so pleased with the result.
We learned so much doing this, but my biggest takeaway is that you need to be really transparent with your contractor about desired budget and timeline upfront. Don’t say that your absolute upper limit is your budget because there will always be unexpected costs.
If you’re trying to finish the project in time for an event, your original deadline should be 6 weeks prior to the event. Things are always delayed its just the nature of the industry.
We have been so busy and I feel like i’ve been moving a million miles a minute yet still not accomplishing everything I’d like to in a day.
I’ve been relying heavily on EASY meals and this is certainly easy!! I timed myself and it took 32 minutes including taking photographs.
Trust me when I say this is one of those recipes that tastes WAY better than it photographs. Amy was RAVING about these and contrary to popular belief, she does not rave about all my recipes.
As usual you can customize these recipe to make it your own! You can use a different kind of bean. You can use small flour tortillas instead of corn or go completely grain free. You can use a different type of cheese or use a vegan cheese substitute to easily make this a fully vegan meal!!
I would say the biggest customization comes in the toppings you choose! I am a classic sour cream and salsa gal myself, but you can use any taco toppings you like. You can even spice them up with some pickled jalapeños.
