Although I am no longer the meal prep champ that I used to be, I still make this meal prep chicken almost weekly. It is flavorful and juicy, but neutral enough not to overpower the dishes you put it in.
During the summer I make it on the grill, but the rest of the year I make it on the stovetop. I Included both ways here for you to use.
How to use the best meal prep chicken:
Chopped Salad - My go to chopped salad recipe includes finely shredded romaine lettuce, sourdough croutons (cube sliced sourdough, toss in olive oil and salt, toast in air fryer or oven at 400F), diced cucumber, quartered cherry tomatoes, diced carrot, crumbled feta, and LOTS of cubed chicken. I also add pickles, pickled red or banana peppers for tang. Then I toss it all in my apple cider vinaigrette.
Hummus and Veggie Wrap - cut the meal prep chicken into thin strips. Cut veggies like carrots, cucumber and bell pepper into sticks. Spread hummus over a tortilla and fill with chicken, veggies and some goat or feta cheese if you want. Roll it up, slice and enjoy. I like to add some olives to mine or a splash or greek dressing.
Caprese Panini - Brush two pieces of bread on both sides with a little oil - I like rustic Italian bread or sourdough. Smash a garlic clove and rub the garlic on the bread. Slice a tomato, mozzarella and chicken into thin slices. Layer on the bread along with fresh basil leaves.
Quick Veggie Pasta - Boil 1/2 lb of past in salted water. Dice 1/2 an onion and a zucchini into small pieces. Saute in olive oil, a pinch of salt and a pinch of crushed red pepper over medium-low heat until soft. Pour 1 jar of your favorite pasta sauce into the pan. And mix util heated through. Add cubed meal prep chicken to the pan with the sauce. Mix the chicken and veggie sauce with the cooked pasta and about 1/4 cup of pasta water. Serve with some parmesan cheese on top.
