I know summer doesn’t officially start until June 21st, but Memorial Day always feels like the unofficial kick off. This year we unexpectedly got absolutely perfect weather at the Jersey shore.
I’ve been spending my time eating lots of good food, laughing with my family and cuddling my new niece. I started a new book, Layla by Colleen Hoover, and watched the college lacrosse championships. Overall it was the relaxing weekend I needed after a few busy weeks getting the new house ready and moving.
After a long weekend, sometimes you need something quick, easy, and let’s be honest, a little more healthy. This is the PERFECT meal for that occasion. I timed myself start to finish this meal took me exactly 22 minutes to prepare and that includes plating and photographing.
Substitutions: you can use any flakey white fish like haddock, tilapia, striped bass or white sea bass. If you don’t like arugula, you can use mixed baby greens instead.
